- 1 Avocado
- Small strips of Smoked Salmon
- 2 Egg
- 1 teaspoon Chili Flakes
- To serve Fresh Dill
Directions
Not a typical Mediterranean dish but a great low carb dinner, these easy stuffed avocados are packed with healthy fats for a filling breakfast or dinner. Tucking in to some eggs with avocado and smoked salmon is a fantastic healthy choice.

Steps
1 Done | Preheat the oven to 220C/430F. |
2 Done | Chop the avocado in half and remove the seed. |
3 Done | Scoop out a little bit more of the avocado holes with a small teaspoon (not too much - just enough to hold an egg. |
4 Done | Place on a baking tray and add small strips of smoked salmon to the holes. |
5 Done | Crack the eggs into a small bowl, then spoon the yolks and however much white the avocado will hold on top of the salmon strips. |
6 Done | Bake for 15-20 minutes. Sprinkle chilli flakes and fresh dill on top to serve. |
