Ingredients
- 12 oz Mature Fresh Spinach
- 1/2 cup part-skim Ricotta Cheeseor cottage cheese.
- 1/2 cup finely shredded plus more for garnish Parmesan Cheese
- 2 beaten Large eggs
- 1 minced Garlic Clove
- 1/4 teaspoon Salt
- 1/4 teaspoon Freshly Ground Pepper

Try these simple but elegant-looking little spinach cake. High calcium, high potassium, low calorie and best of all delicious. This is a great way to serve spinach when you want something fancy snack.

Steps
1 Done | Preheat oven to 350 F |
2 Done | Pulse spinach in 3 batches in a food processor until finely chopped. Transfer to a medium bowl. |
3 Done | Add ricotta cheese, parmesan, eggs, garlic, salt and pepper. |
4 Done | Coat 8 cups of a muffin pan with cooking spray. Divide the spinach mixture among the 8 cups. They will be full. |
5 Done | Bake the spinach cakes until set, about 20 minutes. |
6 Done | Let stand in the pan for 5 minutes. Loosen the edges with a knife and turn out onto a clean cutting board or large plate. Serve warm, sprinkled with more parmesan if desired. |
