Ingredients

Adjust Servings:
2 peeled in stripes and cut into ½ inch slices cucumber
1½ pound stemmed and quartered Tomatoes
1/2 thinly sliced Red Onion
1½ cups pitted and halved Kalamata Olives
1/4 cup chopped Italian flat leaf parsley
2 pitted and cut into chunks Avocado
1 cup broken into large chunks Feta Cheese
1/2 cup extra virgin Olive Oil
1/2 Cup Red Wine Vinegar
2 peeled and minced Garlic Clove
1 Tablespoon Oregano
1 Teaspoon Kosher Salt
1 Teaspoon Freshly Ground Black Pepper

    Greek salad is a popular classic dish. The recipe here brings a variation with avocado. This is a gluten free, vegetarian and family favorite salad around the world.

    Creamy avocado adds a really nice touch to all the tanginess found in traditional Greek salads. A modern-style Greek salad with a zesty dressing, plenty of feta cheese and Kalamata olives, and chunks of avocado to provide a creamy texture contrast and a dose of added nourishment.

    Combine the cucumbers, tomatoes, red onion, kalamata olives and parsley in a large serving bowl. Set aside avocado in a small bowl

    Combine the olive oil, red wine vinegar, garlic, oregano salt and pepper in a small canning jar. Top with the lid and shake well until blended and emulsified. Season with more salt and pepper to taste.

    Put 1 tablespoon or so of the dressing on the avocado and gently mix to coat.

    Put the rest of the dressing on the cucumber mixture and toss to coat.

    Add the avocado to the salad and top with chunks of feta cheese, and serve.
