- 1/3 cup halved Sicilian or other Green Olives
- 1 tablespoon rinsed Capers
- 1/4 teaspoon or to taste crushed Red Pepper
- 4 (4 ounce) Chicken Cutlets
- 1 tablespoon Freshly Ground Pepper
- 1 tablespoon Extra-Virgin Olive Oil

Sicilian olives are large green olives marinated in herbs; you can substitute Spanish manzanilla olives. Accompany with orzo pasta and Chianti, if you’re pouring wine.

1 Done | Combine tomatoes, spinach, olives, capers and crushed red pepper in a bowl. Sprinkle both sides of chicken with pepper. |
