- 4 to 6 slices Whole-Grain Bread
- 1/4 pound Prosciuttoor good-quality ham, thinly sliced
- 8 Egg
- 1/4 cup Heavy Cream

Shirred eggs, also known as baked eggs, are eggs that have been baked in a flat-bottomed dish; the name originates from the type of dish in which it was traditionally baked. Classic baked eggs get a Mediterranean makeover with the addition of prosciutto, red wine vinegar, and tomatoes.

Steps
1 Done | Heat oven to 375° F. |
2 Done | In a medium bowl, combine the oil, vinegar, tomatoes, and 1 tablespoon of the chives. |
3 Done | Arrange the bread in a single layer in a 13-by-9-inch ovenproof baking dish. Top with the prosciutto and the tomato mixture. |
4 Done | Break the eggs on top and drizzle with the cream. Bake until the whites have set but the yolks are slightly runny, 15 to 20 minutes. |
5 Done | Sprinkle with the remaining tablespoon of chives. |
